Most individuals and care providers are under the assumption that most Americans are well nourished. Despite the high rate of obesity and large amounts of calories consumed per capita, many are deficient in critical micronutrients. Although fortification efforts over the past 40 years have provided more in the way of specific B vitamins and minerals such as iron and calcium, a combination of poor eating habits and reduced availability have yielded a large number of people with one or more critical nutrient deficiencies. Some of these deficiencies significantly increase a population’s risk for suboptimal health and/or disease.
